2.50 euros for a 500g bag of polenta semolina

The grains produced by the Moulon farm, dried by AgriObtention, bought by Champs et papilles, ground and packaged by the Rambouillet mills are sold in short circuits (markets, PPE, web, AMAPs). A part is reserved for tasting days in the school canteens, in partnership with the Territorial Food Programme.

2024 production

Seeds

The Marano variety is a population of Italian country with a high vitrosity, used to produce orange polenta semolina. In parallel with the production of grain to establish production costs, IDEEV, INRAE and AgriObtention are starting a selection program.

Marano de Saclay

The future variety will be selected with you, but also with millers, farmers, etc… It will be a population variety that can be multiplied on site by farmers/market gardeners.

Production 2024

Marano 2024 polenta was produced at the Moulon farm, on the Saclay plateau, using sustainable agriculture. The grains do not contain residues of plant protection products (herbicides), but their proteins contain nitrogen of industrial origin. This variety is rich in carotenoids, precursors of vitamin D.

The mill

The milling stages were designed with Eudes Coutté (Champs et papilles), Christian Hubert (Huilerie de la plaine de Versailles), and Magali Rocheteau (Moulins de Rambouillet) to produce a semi-large semolina on a stone mill at reasonable costs.

Flour

Corn kernel milling produces semolina and flour. The flour is purchased by IDEEV to work with INRAE laboratories to design gluten-free products based on corn flour.
